Ingredients

Overnight Oats

  • ½ cup rolled oats 50 g
  • ½ tablespoon chia seeds 6 g
  • teaspoon salt
  • teaspoon cinnamon
  • 1 ½ teaspoon brown sugar 7 g
  • ½ cup milk of choice 120 g, recommended dairy or oat

Apple Compote

  • 1 apple medium
  • 1 teaspoon brown sugar about 5 g, more to taste
  • teaspoon cinnamon
  • pinch salt
  • 1 squeeze lemon juice more to taste

Instructions

Make Apple Compote

  • Prep Apples: Wash, peel, and chop the apple into even pieces.

  • Cook Apples: Pour a little water into a pot to barely cover the bottom, add the chopped apple, the brown sugar, cinnamon, and a pinch of salt, then set over medium heat and bring to a gentle boil, stirring occasionally.

  • Reduce Heat: Once it boils, lower to a gentle simmer and cook until the apples are soft and most of the water has evaporated, stirring every minute or two and more often near the end to prevent scorching.
  • Finish Compote: Stir in the lemon juice, taste, and adjust with more sugar, lemon, salt, or cinnamon as needed until the flavor is right.

  • Cool Or Store: Let the compote cool, then use it right away or refrigerate in a sealed container until needed.

Make Overnight Oats

  • Dissolve Sugar: Brown sugar doesn't dissolve well in cold milk. Either use room temperature milk and stir until it disappears, or pour 2 tablespoons of the milk into a small pot with the sugar, set it over low heat, and stir for about 2 minutes until dissolved. Add it back to the rest of the milk.

  • Add Remaining Ingredients: In a jar or bowl, add the oats, chia seeds, salt, and cinnamon to the milk mixture and stir well to combine evenly.
    ½ cup rolled oats, ½ tablespoon chia seeds, ⅛ teaspoon salt, ⅛ teaspoon cinnamon
  • Refrigerate Overnight: Cover and refrigerate for at least 6 hours, preferably overnight, to let the oats and chia thicken.
  • Stir, Top, And Enjoy: In the morning, give the oats a quick stir, add a splash of milk if you want a looser texture, top with the prepared apple compote, and enjoy.
