Pear Layer

  • 1/2 tbsp butter melted, 10 g
  • 2 tsp maple syrup 14 g
  • 1 medium pear about 110-140 g after removing core
  • 1 tbsp lemon juice 15 g
  • 1/4 tsp cinnamon
  • pinch salt

Oats Batter

  • 1 cup rolled oats 100 g, half ground
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • 3 tsp brown sugar 14 g
  • 1/2 cup milk of choice 120 g
  • 1/4 cup Greek yogurt no-fat, 60 g
  • 1 tbsp oil 14 g
  • 1 small apple shredded, 80 - 100 g (shreded)

Instructions

Prep Oat Batter

  • Prep Oats: Grind half the oats until finely ground like flour.
    1 cup rolled oats
  • Mix Dry Ingredients: Combine ground oats with whole oats, salt, cinnamon, baking powder, and brown sugar.
    1/4 tsp salt, 1/2 tsp cinnamon, 1/2 tsp baking powder, 3 tsp brown sugar
  • Mix Wet Ingredients: Stir in milk, yogurt, and oil until smooth.
    1/2 cup milk of choice, 1/4 cup Greek yogurt, 1 tbsp oil
  • Add the Apple: Fold in shredded apple.

Prepare Pears

  • Prep Pear: Wash, peel, core, and slice the pear thinly.
    1 medium pear
  • Season: Toss pear slices with butter, maple syrup, lemon juice, cinnamon, and salt.
    1/2 tbsp butter, 2 tsp maple syrup, 1 tbsp lemon juice, 1/4 tsp cinnamon, pinch salt

Bake

  • Preheat Oven: Preheat oven to 180°C (350°F).
  • Prepare Baking Pan: Grease the bottom and sides of the baking pan. Line the bottom if you like.
  • Add the Pear: Spread pear slices with liquid evenly on pan bottom.
  • Fill: Gently spoon oat batter over pears and spread evenly.
  • Bake: Bake for 40 minutes, turning off 5 minutes before the timer goes off. Crack door open and let cool inside for 5 minutes.
  • Cool: Cool 10–20 minutes at room temperature, loosen edges, invert onto a plate so pears end up on top.
  • Serve: Serve warm or cool completely and refrigerate.

Notes

  • Baking pan: You'll need a 6-inch square pan or an equivalent. Or you can double the recipe and use an 8-inch square pan.
