Matcha Chia Pudding:

  • 2 tbsp chia seeds 24 g
  • 1/3 cup Greek yogurt non-fat, 80 g
  • 1/3 cup milk of choice 80 g
  • 2 tsp sweetener 14 g
  • 1/2 tsp matcha

Strawberry Compote:

  • 1/2 cup strawberries fresh or frozen, 75 g
  • 1/2 tbsp sugar 6 g, more if needed
  • 1/4 tsp lemon juice more if needed
  • 1/2 tsp cornstarch optional, more if needed
  • 1 tsp water

Instructions

Matcha Chia Pudding:

  • Mix wet ingredients: Combine Greek yogurt, milk, and honey in a bowl then stir until smooth.
    1/3 cup Greek yogurt, 1/3 cup milk of choice, 2 tsp sweetener
  • Add the matcha powder: Whisk in matcha powder well. Dissolve any lumps.

  • Add the chia seeds: Stir in chia seeds evenly.
    2 tbsp chia seeds
  • Cover and chill: Cover and refrigerate at least 3 hours until thickened.

Strawberry Compote:

  • Prep strawberries: Wash, hull, and chop fresh strawberries or defrost frozen ones in a pot with a splash of water, then chop with a fork or spoon.
    1 tsp water, 1/2 cup strawberries
  • Add sugar and cook: Add sugar to the strawberries and cook over medium heat to a gentle boil. Simmer 5–10 minutes until soft and juicy.

  • Thicken compote: Mix cornstarch with water, stir half into pot, cook 1–2 minutes till thickened. Add more cornstarch slurry if you want the compote thicker.

  • Adjust flavor: Stir in lemon juice, taste, them adjust sweetness and tartness by adding more sugar or lemon juice.
    1/4 tsp lemon juice
  • Cool: Cool to room temperature.

Combine:

  • Top: Spoon cooled strawberry compote over thickened chia pudding and serve.
