Strawberry Matcha Chia Pudding is a lovely mix of sweet and earthy flavors, perfect for a healthy breakfast or snack. It’s easy to make and combines creamy Greek yogurt with matcha and fresh and fruity strawberry compote.
It’s a great choice when you want something that feels a bit special but comes together with minimal fuss.

- Slightly more involved than your average chia pudding. It requires around 15 to 20 minutes to prepare the strawberry compote, so it’s not as quick as your regular chia pudding. Totally worth it though, especially if you’re batch prepping.

Ingredients and Substitutes
Matcha Greek Yogurt Chia Pudding

- Chia seeds. These absorb liquid to create the pudding’s thick, gel-like texture. Whole seeds are best for the classic consistency.
- Greek yogurt. Provides creaminess and a tangy flavor; non-fat is recommended but any type works.
- Milk. Used to adjust the pudding’s consistency; choose any milk you like, such as dairy or plant-based.
- Sweetener. Honey or your preferred liquid sweetener adds a touch of sweetness; feel free to adjust based on taste.
- Matcha. Adds a subtle green tea flavor and a hint of color to the pudding.
Strawberry Compote

- Strawberries. Fresh or frozen, these form the base of the compote for a fruity topping.
- Sugar. Sweetens the compote; you can add more or less depending on how tart your berries are.
- Lemon juice. Enhances the flavor by adding brightness to the compote.
- Cornstarch. Optional thickener for the compote if you want it less runny without cooking too long.
Step-by-Step: How to Make Strawberry Matcha Chia Pudding
Step1: Prepare Matcha Chia Pudding
- Mix wet ingredients. In a bowl, combine the Greek yogurt, milk, and honey (or your choice of sweetener). Stir thoroughly until the mixture is smooth and well blended.
- Stir in matcha. Add the matcha powder to the yogurt mixture. Whisk carefully to dissolve any lumps.


- Add chia seeds. Sprinkle in the chia seeds and stir well to evenly distribute them throughout the mixture.


- Refrigerate. Cover the bowl and place it in the fridge for at least 3 hours, or until the pudding becomes nice and thick.

Step 2: Prepare Strawberry Compote

- Prepare strawberries. If using fresh, wash, hull, and chop them. Place strawberries in a small pot. If frozen, place them directly in the pot, add a splash of water, and gently defrost over low heat, stirring occasionally. Once softened, chop with a fork or knife (still inside the pot).
- Add sugar and cook. Sprinkle the sugar over the strawberries and cook on medium heat. Bring to a gentle boil, then reduce heat and simmer for 5–10 minutes until the berries soften and release their juices.


- Thicken the compote (optional). In a small cup, mix cornstarch and water until smooth. Stir half the cornstarch mixture into the pot and cook a minute or two more until thickened. Add more slurry if you want a thicker compote, repeating as needed.




- Add lemon juice and adjust flavors. Stir in lemon juice, then taste the compote. Add more sugar or lemon juice to get the perfect balance of sweet and tart.
- Cool down. Let the compote cool to about room temperature before using it to top the pudding.

Step 3: Combine
- Serve. Spoon the cooled strawberry compote over the thickened chia pudding and enjoy.

Variations
Vegan
To make this Strawberry Matcha Chia Pudding vegan-friendly:
- Swap the non-fat Greek yogurt for a plant-based yogurt. Coconut, almond, or soy yogurts are great options; just choose one with a creamy texture.
- Use your favorite vegan sweetener. Maple syrup, agave nectar, or a branded option will work well as the sweetener of choice.
- Ensure any protein powder you add is plant-based if you decide to boost protein (see next section).

High Protein
Want to power up this pudding with extra protein? Here’s how:
- Add a scoop of your preferred protein powder to the yogurt-milk mix before stirring in the chia seeds. This keeps the texture smooth and adds around 20 grams of protein.
- Add an extra half tablespoon of chia seeds to keep the pudding thick and satisfying. Without it, the pudding might be a bit too thin.
- If your protein powder is already sweetened, reduce the sweetener by half to avoid an overly sweet pudding.

Meal Prep
Strawberry matcha chia pudding is a perfect make-ahead treat:
- Make the chia pudding base first and let it thicken.
- Top with the strawberry compote either right after the pudding sets or just before serving.
Tips
- Don’t stir together. Keeping both layers separate makes the flavors more distinct.
- Simplify the topping with strawberry puree. Instead of cooking a compote, blend strawberries into a puree, sweeten and add lemon juice to taste, then mix in chia seeds and let it thicken before topping your pudding. This shortcut saves time without skimping on flavor.
- Warm milk to smooth out matcha. Heat the milk slightly and whisk in the matcha before combining with other wet ingredients if you find your matcha tends to clump. This little step helps create a smooth, vibrant pudding base.
- Swap in different pudding bases. Don’t hesitate to use alternative bases like my milk-only chia pudding or even cottage cheese chia pudding base, depending on what you have on hand and how much protein you want.

Storage
Once you’ve prepared your strawberry matcha chia pudding, store it in a tightly sealed container in the fridge. It will keep fresh and tasty for up to 3-4 days.
